CiderCon was created to effect positive changes in cider making, cider fruit production, the cider market and cider regulations. It's an opportunity for the cider community to gather, share ideas, collaborate and learn. CiderCon allows cider producers to meet their industry colleagues to exchange ideas on best practices, innovations and trends. The discussions that take place at CiderCon provide a foundation of strength and diversity for the industry.

Each year, the USACM Conference (CiderCon) features an international cider tradition and invites guests from that country to share their experience, and their cider! Everyone’s favourite Ciderologist will be at The Northman to talk about his new book “Ciderology: From History and Heritage to the Craft Cider Revolution.” Gabe is a delightful speaker and globetrotter too with a wealth of knowledge. Join us on a culinary journey as we adventure deep into the world of the two finest exports of England's West Country- Cider and Cheese. We'll enjoy fine fermented tipples from a handful of award winning producers, pairing each round with cheese from the region- famous for its terroir and heritage. Welcome to Chicago's first cidery! We like to call it our "Urban Cidery." We've been working as hard as we can over the past three years - producing, packaging, and selling our cider, and now we want to let YOU in on the process.
On Feb 16th, we're opening our doors to the public for the first time - and throwing one hell of a party to celebrate. We'll have food from our neighbors at Rica Arepas, live music, tours of our facility (and maybe even our secret bee hive if you ask nicely), samples of ciders we're working on right from the tank, and plenty of Right Bee cider.

Mike Beck is a fifth generation apple grower in central Michigan, and was the first cider maker in America to put hard cider into a 16oz can with Uncle John’s Cider. He just finished a two year term as the President of the US Assoc of Cider Makers, and has been at the heart of GLINTCAP since its inception.
On Thursday, Feb 15th he will be tapping a few special kegs at Hop Leaf (5148 N Clark Ave), including his award winning Perry, as well as the single variety cider Baldwin and some of his heralded fruit cider blends.
Come to the Hop Leaf to meet the cider maker, ask questions and crack into a few rare treats sure to make an appearance. Mike’s spirit has been the source of encouragement for an entire generation of new cider makers in the Midwest, and his mission to make cider fun remains at the core of his business.

Darlene Hayes (@allintocider) combines history, culture, tasting to bring apfelweins produced near Frankfurt to life. Ms Hayes has made several exploratory trips to the birth of this cider in the last several years, and has amazing stories and samples to share. The tastings will include an homage cider made in the apfelwein style by American cideries Prima and Tilted Shed. We will also tour German producers from Andreas Schneider to Possmann's, and sample apfelwein not available in the United States. The tradition of using things like speierling (Sorbus domestica) and medlar to add tannin and flavor to cider seems to be unique to the cidermakers around Frankfurt. Darlene will explore this fascinating style through story and taste! This lecture is not to be missed.

Charles will guide you through a horizontal and vertical flights showing you the amazing versatility and wide range of possibilities with apple fermentation, distillation, and the aging process. Whether you are new or old to apples, you will learn something new with the apple professor himself.
